Granola Bar Ingredients
  • 3 cups old-fashioned rolled oats 270g
  • 1/2 cup sunflower seeds 65g, toasted
  • 1/3 cup mini dark chocolate chips 60g
  • 1/2 cup creamy peanut butter 125g
  • 1/2 cup honey 170g
  • 2 tablespoons coconut oil 30ml
  • 1 teaspoon vanilla extract 5ml
  • 1 pinch salt flakes to taste

  • 1 8x8 inch square baking pan
  • 1 Parchment Paper Crumpled for texture
  • 1 Small saucepan

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Spread oats and sunflower seeds on a baking sheet and toast for 8-10 minutes until golden and fragrant.
  2. In a saucepan over medium heat, whisk honey, peanut butter, and coconut oil until bubbling. Remove from heat and stir in vanilla.
  3. Mix toasted oats and seeds with the warm honey syrup in a large bowl. Let cool for 5 minutes, then fold in mini chocolate chips.
  4. Press the mixture firmly into a 8x8 pan lined with crumpled parchment paper. Top with salt flakes. Chill for 2 hours before slicing into rectangles.

Notes

Press the mixture as hard as possible to ensure the bars don't crumble.
Wait until the mixture cools slightly before adding chocolate chips so they don't melt.
