Prepare the Sauce
- Melt butter in a skillet over medium heat. Whisk in flour and cook for 1 minute until bubbly.
- Slowly whisk in chicken broth. Simmer until thickened. Stir in sour cream and half of the green chiles to create an ivory-colored sauce.
Assemble the Casserole
- Spread a thin layer of sauce in the ceramic dish. Layer 4-5 softened white corn tortillas over the sauce.
- Add half of the shredded chicken and 1 cup of Monterey Jack cheese. Repeat layers, finishing with a final layer of tortillas.
- Pour the remaining sauce over the top and cover with a thick blanket of Monterey Jack cheese and remaining green chiles.
Bake
- Bake at 375°F (190°C) for 20-25 minutes. Broil for 2 minutes to get golden-brown toasted spots. Garnish with fresh cilantro flakes.
