  • 1 lb Penne Pasta 450g
  • 1.5 lbs Chicken Breast 680g, sliced into strips
  • 1.5 cups Heavy Cream 360ml
  • 1/2 cup Sun-dried Tomatoes 110g, oil-packed and sliced
  • 3 cups Baby Spinach 90g, fresh
  • 3/4 cup Parmesan Cheese 75g, finely grated
  • 3 cloves Garlic minced
  • 1 tsp Black Pepper cracked
  • 2 tbsp Fresh Parsley chopped for garnish

  • 1 Large Skillet Wide surface for searing chicken
  • 1 Pasta Pot For boiling penne

Method
 

Preparation
  1. Cook penne in salted water until al dente. Drain and reserve some pasta water.
  2. Season chicken strips with salt and pepper. Sear in a hot skillet until golden-brown char marks appear. Remove and set aside.
  3. In the same skillet, sauté garlic and sun-dried tomatoes. Pour in heavy cream, scraping the bottom of the pan to release the flavorful fond.
  4. Stir in spinach until wilted, then add parmesan cheese until sauce is glossy. Toss in pasta and top with seared chicken.

Notes

Ensure chicken is dry before searing for the best char marks.
Use high-quality oil-packed sun-dried tomatoes for the best flavor and sauce color.
