Ingredients
  

  • 1 tbsp Avocado Oil (15ml)
  • 1 lb Lean Ground Beef (450g), 90/10 lean
  • 1 tbsp Chili Powder (8g)
  • 1 tsp Ground Cumin (3g)
  • 1 tsp Paprika (3g)
  • 0.5 tsp Garlic Powder (2g)
  • 0.5 tsp Onion Powder (2g)
  • 0.25 cup Beef Broth (60ml)
  • 1 cup Long-Grain White Rice (185g), uncooked
  • 1 can Black Beans (15-ounce / 425g), rinsed and drained
  • 1 can Sweet Corn (15-ounce / 425g), drained
  • 2 Medium Roma Tomatoes diced
  • 1 Large Avocado pitted and cut into chunks
  • 0.5 cup Sour Cream (120g)
  • 0.25 cup Fresh Cilantro (10g), chopped
  • Salt and Pepper to taste

Method
 

  1. Cook the rice according to package directions. For best results, let it steam off the heat, covered, for 5 minutes after cooking before fluffing with a fork.
  2. While the rice cooks, heat oil in a large skillet over medium-high heat. Add ground beef, break it apart, and cook until deeply browned and no longer pink. Drain excess fat.
  3. Stir in the chili powder, cumin, paprika, garlic powder, and onion powder. Toast for 30 seconds until fragrant. Pour in the beef broth and simmer for 2-3 minutes until slightly thickened.
  4. While the beef simmers, prepare the fresh ingredients: rinse and drain the black beans and corn, dice the tomatoes, chop the cilantro, and chunk the avocado.
  5. Divide the fluffy rice among four bowls. Top with the seasoned beef, followed by the black beans, corn, and tomatoes. Finish with a dollop of sour cream, a sprinkle of cilantro, and the avocado chunks. Serve immediately.

Notes

Don't Crowd the Pan: Give the ground beef enough space in the skillet to sear, not steam. A deep brown crust equals a massive flavor boost.
Rinse Your Beans: Rinsing canned beans removes the starchy liquid they are packed in, resulting in a cleaner flavor and better texture.
