Cooking and Assembly
- Place a large skillet over medium-high heat. Add the 1 lb (450g) of ground beef, breaking it apart with a spatula as it cooks. Cook until deeply browned, about 5-7 minutes. Drain any excess grease.
- Lower the heat to medium. Sprinkle the 2 tbsp (30g) of taco seasoning over the beef and pour in 1/4 cup (60ml) of water. Stir continuously until a thick sauce coats the meat. Remove from heat.
- Lay a warm tortilla flat. Spoon a quarter of the beef near the bottom third. Pile 1/2 cup (56g) of freshly grated cheddar cheese on top. Fold the sides in, then tightly roll it upwards into a cylinder.
- Wipe the skillet clean and set to medium-low. Melt 1/2 tbsp (7g) of butter. Place the burrito seam-side down into the butter to seal it closed.
- Grill for 2-3 minutes until golden-brown. Flip and toast the other side for 2 minutes. Slice in half on a rustic cutting board and serve hot.
Notes
Tip 1: Grate your own cheese. Pre-shredded cheese contains anti-caking agents that ruin the gooey texture.
