Ingredients

Burrito Ingredients
  • 1 lb Ground beef (80/20) Or 450g. Leaner beef works, but 80/20 provides the best flavor.
  • 2 tbsp Taco seasoning Or 30g. Store-bought or homemade.
  • 1/4 cup Water Or 60ml. Helps create a sauce for the beef.
  • 4 Large flour tortillas 10-inch or 25cm. Warmed slightly for pliability.
  • 2 cups Sharp cheddar cheese Or 226g. Freshly grated is highly recommended.
  • 2 tbsp Unsalted butter Or 30g. For grilling the exterior.

Equipment

  • 1 Large Cast-Iron Skillet Essential for getting a perfectly golden, crispy crust on the burrito.
  • 1 Box Grater For freshly grating the cheddar cheese.

Method

Cooking and Assembly
  1. Place a large skillet over medium-high heat. Add the 1 lb (450g) of ground beef, breaking it apart with a spatula as it cooks. Cook until deeply browned, about 5-7 minutes. Drain any excess grease.
  2. Lower the heat to medium. Sprinkle the 2 tbsp (30g) of taco seasoning over the beef and pour in 1/4 cup (60ml) of water. Stir continuously until a thick sauce coats the meat. Remove from heat.
  3. Lay a warm tortilla flat. Spoon a quarter of the beef near the bottom third. Pile 1/2 cup (56g) of freshly grated cheddar cheese on top. Fold the sides in, then tightly roll it upwards into a cylinder.
  4. Wipe the skillet clean and set to medium-low. Melt 1/2 tbsp (7g) of butter. Place the burrito seam-side down into the butter to seal it closed.
  5. Grill for 2-3 minutes until golden-brown. Flip and toast the other side for 2 minutes. Slice in half on a rustic cutting board and serve hot.

Notes

Tip 1: Grate your own cheese. Pre-shredded cheese contains anti-caking agents that ruin the gooey texture.
Tip 2: Always grill seam-side down first to lock the burrito closed and prevent spilling.
