  • 1 cup unsalted butter 226g, softened
  • 1 cup granulated sugar 200g
  • 1 large egg room temperature
  • 1 tsp vanilla extract 5ml
  • 2.5 cups all-purpose flour 312g
  • 1 tsp baking soda 5g
  • 0.5 tsp salt 3g
  • 1 tsp cornstarch 3g
  • 1 tbsp matcha powder 6g, culinary or ceremonial
  • 0.5 cup freeze-dried strawberries 15g, pulverized into powder

Equipment

  • 2 Baking Sheet Lined with parchment paper
  • 1 Hand Mixer Or stand mixer
  • 1 Food Processor To pulverize strawberries

Method
 

Preparation
  1. Cream softened butter and granulated sugar together for 3-5 minutes until light and fluffy.
  2. Beat in the egg and vanilla. Gradually mix in flour, baking soda, salt, and cornstarch until a dough forms.
  3. Divide dough in half. Mix sifted matcha into one half and pulverized strawberry powder into the other.
  4. Take 1 tbsp of each dough, press together, and roll into a ball. Chill for 30 minutes.
  5. Bake at 350°F (175°C) for 9-11 minutes until set and matte. Do not brown.

Notes

Sift your matcha to avoid bitter clumps.
Remove from oven early to maintain the vibrant pink and green colors.
