  • 1 lb (454g) Sirloin Steak 1.5 inches thick
  • 1 tsp (2g) Cracked Black Pepper
  • 1 cup (185g) White Rice Uncooked
  • 1 large Avocado Ripe, sliced
  • 1 cup (150g) Corn Kernels Fresh or frozen
  • 1/2 large Red Onion Thinly sliced
  • 1/2 cup (120ml) Sour Cream Or Greek yogurt
  • 1/2 cup Fresh Cilantro Packed
  • 1 whole Lime Juiced

Equipment

  • 1 Cast-Iron Skillet Essential for a good steak sear.
  • 1 Small Food Processor For the cilantro cream sauce.

Method
 

Preparation
  1. Mix apple cider vinegar, sugar, and salt. Submerge sliced red onions for 20 minutes until they turn bright pink.
  2. Rinse rice. Simmer in 1.5 cups (355ml) water for 15 minutes. Let rest for 5 minutes, then fluff.
Cooking
  1. Heat oil in a skillet. Sear corn kernels until charred black spots appear. Remove from pan.
  2. Season steak with salt and pepper. Sear in a hot skillet for 4-5 minutes per side for medium-rare. Rest for 8 minutes before slicing.
Assembly
  1. Layer rice, steak slices, avocado, corn, and onions. Drizzle with cilantro cream sauce and garnish with cilantro sprigs.

Notes

Always slice the steak against the grain for maximum tenderness.
Use a DIY piping bag for the zig-zag sauce drizzle.
