  • 2 large English Cucumbers Sliced into half-moons
  • 1 whole Fresh Pineapple Peeled, cored, and diced into 1-inch chunks
  • 0.5 medium Red Onion Thinly sliced into slivers
  • 1-2 whole Jalapeños Sliced into rounds
  • 0.25 cup Fresh Cilantro Chopped
  • 1 tsp Dried Red Chili Flakes
  • 2 whole Limes Juiced
  • 1 tbsp Avocado Oil Or any neutral oil
  • 0.5 tsp Sea Salt To taste

Method
 

Preparation
  1. Slice the English cucumbers into 1/2-inch thick half-moons. Dice the fresh pineapple into 1-inch chunks. Place both into a large bowl.
  2. Add the thinly sliced red onion slivers, jalapeno rounds, and chopped cilantro to the cucumber and pineapple mixture.
  3. Whisk lime juice, oil, and salt together. Pour over the salad and toss gently to coat.
  4. Sprinkle the dried red chili flakes over the top. Let sit for 15 minutes to allow flavors to meld before serving.

Notes

Use a mandoline for the thinnest onion slivers.
Remove jalapeno seeds for a milder version.
