Preparation and Grilling
- Pat chicken dry and slice horizontally. Season with olive oil, salt, and pepper.
- Place chicken on high heat for 5-6 mins at an angle for char marks. Flip, add pepper jack cheese, and melt.
- Spread chipotle mayo on toasted ciabatta, layer arugula, chicken, and bacon. Top with flour-dusted bun.

Use a grill press for better marks.
