Ingredients
  

Spicy Grilled Chicken Ciabatta Ingredients
  • 2 large Chicken Breasts approx 1 lb / 450g, halved horizontally
  • 4 rolls Ciabatta Rolls flour-dusted
  • 8 strips Bacon thick-cut, cooked crispy
  • 4 slices Pepper Jack Cheese with visible pepper flecks
  • 2 cups (40g) Arugula fresh baby arugula
  • 1/2 cup (120ml) Mayonnaise full fat for best flavor
  • 2 tbsp (30ml) Chipotle in Adobo minced into a paste

Equipment

  • 1 Outdoor Grill or Cast Iron Grill Pan Essential for diagonal char marks.
  • 1 Meat Thermometer To ensure chicken reaches 165°F.

Method
 

Preparation and Grilling
  1. Pat chicken dry and slice horizontally. Season with olive oil, salt, and pepper.
  2. Place chicken on high heat for 5-6 mins at an angle for char marks. Flip, add pepper jack cheese, and melt.
  3. Spread chipotle mayo on toasted ciabatta, layer arugula, chicken, and bacon. Top with flour-dusted bun.

Notes

Use a grill press for better marks.
Ensure the mayo has an orange tint by adding more adobo sauce if desired.
