Southern Tomato Pie Ingredients
  • 1 unbaked 9-inch pie crust deep dish, crimped edges
  • 2 lbs Red Tomatoes sliced 1/2 inch thick (900g)
  • 2 large Yellow Onions thinly sliced (500g)
  • 8 slices Bacon cooked until crispy and crumbled
  • 2 cups Sharp Cheddar Cheese freshly shredded (225g)
  • 1/2 cup Mayonnaise Duke's preferred (120ml)
  • 1/4 cup Fresh Basil & Parsley chopped for garnish

  • 1 9-inch pie dish Ceramic preferred
  • 1 Large Skillet For onions and bacon

Method
 

Prepare the Crust
  1. Preheat oven to 375°F (190°C). Fit the crust into a 9-inch pie dish and crimp the edges. Line with parchment, fill with pie weights, and bake for 15 minutes. Remove weights and bake 5 more minutes.
The Filling
  1. Slice tomatoes and place on paper towels. Salt generously and let sit for 20 minutes to remove excess moisture. Blot dry thoroughly.
  2. Sauté sliced onions in bacon fat over medium-low heat for 20-25 minutes until dark brown and sweet.
Assembly & Baking
  1. Layer caramelized onions, bacon crumbles, and blotted tomatoes in the par-baked crust.
  2. Mix mayonnaise and cheddar. Spread over the tomatoes. Bake at 350°F (175°C) for 30 minutes until toasted cheese bubbles appear.

Notes

Salt the tomatoes aggressively to prevent a soggy crust.
Allow the pie to rest for 30 minutes before slicing to ensure it holds its shape.
