  • 1/2 cup Salted Butter 113g, melted in dish
  • 1.5 cups Self-Rising Flour 190g
  • 1 cup Granulated Sugar 200g
  • 1 cup Whole Milk 240ml
  • 1 tsp Vanilla Extract 5ml
  • 4 large Ripe Bananas 450g, sliced
  • 1/2 cup Brown Sugar 100g
  • 1 tbsp Ground Cinnamon 8g

  • 1 9x13 inch Ceramic Baking Dish White ceramic preferred for even baking
  • 1 Large Mixing Bowl

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Melt butter in a 9x13 inch baking dish in the oven until sizzling.
  2. Whisk flour, white sugar, milk, and vanilla in a bowl until just combined. Do not over-mix.
  3. Toss sliced bananas with brown sugar and cinnamon until a syrup forms.
  4. Pour batter over melted butter (do not stir). Top with banana mixture.
  5. Bake for 40-45 minutes until edges are toasted and center is set.

Notes

Use 'cheetah-spotted' bananas for the best caramelization.
Do not stir the batter into the butter for the best crispy edges.
