  • 3-4 lbs Beef Brisket Flat cut preferred
  • 1 tbsp Kosher Salt
  • 1 tbsp Black Pepper Coarsely ground
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Smoked Paprika
  • 500 ml Beef Broth
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Balsamic Vinegar
  • 2 tbsp Tomato Paste
  • 4-5 sprigs Fresh Thyme
  • 2 tbsp Fresh Parsley Finely chopped

  • 1 Slow Cooker 6-quart or larger
  • 1 Large Skillet For searing the meat

Method
 

Preparation
  1. Rub the brisket with salt, pepper, garlic, onion powder, and paprika. In a hot skillet, sear all sides until a dark brown crust forms (about 4-5 minutes per side).
  2. Place brisket in the slow cooker. Mix broth, Worcestershire, vinegar, and tomato paste; pour around the meat. Top with thyme sprigs. Cover and cook on Low for 8-10 hours.
  3. Remove the brisket and let it rest for 15 minutes. Slice against the grain into thick pieces.
  4. Simmer the cooking liquid in a pan. Whisk in a cornstarch slurry (15g cornstarch + 30ml water) until thick and glossy. Drizzle over meat and garnish with parsley and fresh thyme.

Always slice against the grain for maximum tenderness.
