- Rub the brisket with salt, pepper, garlic, onion powder, and paprika. In a hot skillet, sear all sides until a dark brown crust forms (about 4-5 minutes per side).
- Place brisket in the slow cooker. Mix broth, Worcestershire, vinegar, and tomato paste; pour around the meat. Top with thyme sprigs. Cover and cook on Low for 8-10 hours.
- Remove the brisket and let it rest for 15 minutes. Slice against the grain into thick pieces.
- Simmer the cooking liquid in a pan. Whisk in a cornstarch slurry (15g cornstarch + 30ml water) until thick and glossy. Drizzle over meat and garnish with parsley and fresh thyme.
