Main Ingredients
  • 1.5 cups Jasmine Rice 285g, rinsed
  • 2.25 cups Water 540ml
  • 1 lb Large Shrimp 450g, peeled and deveined
  • 1 tsp Smoked Paprika 5g
  • 1 cup Fresh Pineapple 165g, cubed
  • 1/4 cup Red Onion 40g, diced
  • 1 whole Avocado Half fanned, half for crema
  • 1/4 cup Greek Yogurt 60g

  • 1 Cast-Iron Skillet For searing the shrimp
  • 1 Small Food Processor For the avocado crema

Method
 

Preparation
  1. Rinse jasmine rice. Combine with water in a pot, bring to boil, then simmer covered for 15 minutes. Fluff with a fork.
  2. Mix cubed pineapple, red onion, and cilantro in a small bowl with lime juice.
  3. Toss shrimp with spices and oil. Sear in a hot skillet for 2 minutes per side until charred and opaque.
  4. Combine half an avocado, yogurt, and lime juice in a blender. Process until smooth enough to drizzle.

Notes

Ensure shrimp are very dry before searing to get the best char marks.
Use fresh pineapple rather than canned for the best texture.
