  • 2 lbs (900g) Large Shrimp Tails on, deveined
  • 12 oz (340g) Smoked Kielbasa Sausage Sliced into rounds
  • 1 lb (450g) Baby Red Potatoes Halved
  • 3-4 ears Yellow Corn Cut into 2-inch rounds
  • 1/2 cup (60g) Cajun Seasoning Divided use
  • 1/2 cup (115g) Unsalted Butter Melted
  • 4 cloves Garlic Minced
  • 2 whole Fresh Lemons Thinly sliced
  • 1 tbsp Dried Parsley Flakes
  • 1 tsp Cracked Black Pepper

Equipment

  • 1 Large Stockpot At least 8-quart capacity
  • 1 Colander For draining
  • 1 Brown Parchment Paper For serving

Method
 

Preparation
  1. Fill a large stockpot with 8 quarts of water. Add Cajun seasoning and lemon halves. Bring to a rolling boil.
  2. Add halved red potatoes and boil for 10-12 minutes. Add corn rounds and boil for another 5 minutes until tender.
  3. Add sliced smoked sausage for 3 minutes. Add large shrimp and cook for 2-3 minutes until pink and opaque. Drain immediately.
  4. Melt butter with minced garlic in a small pan. Spread the boiled ingredients onto parchment paper and drizzle with garlic butter sauce.
  5. Top with lemon slices, dried parsley flakes, cracked black pepper, and an extra dusting of Cajun seasoning.

Notes

Use a very large pot to ensure even cooking.
Do not overcook the shrimp; they continue to cook slightly after draining.
