Base Ingredients
  • 1.5 lbs Chicken Breast sliced into thin strips (680g)
  • 2 large Red Bell Peppers sliced into strips
  • 2 large Green Bell Peppers sliced into strips
  • 1 large White Onion sliced into translucent strips
  • 3 tbsp Avocado Oil or other high-heat oil (45ml)
Red Spice Rub
  • 1 tbsp Chili Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Cumin
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 tsp Sea Salt
Toppings & Serving
  • 8 small Flour Tortillas toasted with brown spots
  • 1/2 cup Fresh Cilantro finely chopped (15g)
  • 2 whole Limes cut into wedges and rounds

  • 1 Rectangular metal baking tray Large rimmed baking sheet
  • 1 Aluminum foil Silver foil, slightly crumpled

Method
 

Prepare the Tray
  1. Preheat your oven to 425°F (220°C). Line a large metal baking tray with crumpled silver aluminum foil to ensure better air circulation.
Season and Roast
  1. In a large bowl, combine chicken strips, peppers, and onions. Drizzle with oil and toss with the coarse red spice rub until heavily coated.
  2. Spread ingredients in a single layer on the tray. Roast for 18-22 minutes until chicken is cooked through and vegetables have dark, blistered edges.
Final Flourish
  1. Remove from oven. Garnish with a heavy sprinkling of chopped cilantro and nestle lime wedges/rounds into the tray.
  2. Briefly toast flour tortillas until small brown spots appear and serve immediately with the warm fajita mix.

Notes

Ensure the oven is fully preheated to 425°F to achieve the char.
Do not overcrowd the pan; use two trays if necessary to prevent steaming.
