- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the mushrooms in a single layer and cook, stirring occasionally, for 4-5 minutes until browned.
- Add the zucchini to the pan in a single layer and cook for 2-3 minutes without stirring to get a good sear.
- Stir the vegetables together. Add the minced garlic, salt, pepper, and optional red pepper flakes. Cook for 2-3 more minutes, stirring frequently, until the zucchini is crisp-tender.
- Remove from heat and serve immediately.

Don't Crowd the Pan: Use a large enough skillet to avoid steaming the vegetables; cook in batches if needed.
