Skillet Ingredients
  • 1 lb (450g) Italian Sausage Links Cut into thick rounds
  • 3 large Bell Peppers 1 red, 1 yellow, 1 green, sliced into strips
  • 1 large White Onion Cut into wedges
  • 3 tbsp (45ml) Extra Virgin Olive Oil Divided
  • 1 tsp (2g) Dried Oregano
  • 1/2 tsp (1g) Crushed Red Pepper Flakes
  • To Taste Salt and Pepper

  • 1 Black Cast Iron Skillet Large 12-inch preferred
  • 1 Wooden Spoon or Tongs

Method
 

Preparation
  1. Heat 1 tbsp (15ml) olive oil in a cast iron skillet. Add sausage rounds and sear for 3-5 minutes until they develop dark brown edges. Remove and set aside.
  2. Add remaining olive oil, pepper strips, and onion wedges. Cook for 8-10 minutes until peppers are limp with charred spots and onions are translucent.
  3. Return sausage to the pan. Add oregano and red pepper flakes. Toss for 2 minutes until a glossy pan sauce forms and everything is well coated.

Notes

Use a cast iron skillet for the best charring results.
Don't crowd the pan to ensure the vegetables sauté rather than steam.
