  • 1.5 lbs chicken breast 680g, sliced into strips
  • 1 can black beans 425g, rinsed and drained
  • 1.5 cups sweet yellow corn 250g, canned or frozen
  • 1 large red bell pepper 150g, diced
  • 1 cup cheddar cheese 115g, shredded
  • 1 cup monterey jack cheese 115g, shredded
  • 1 cup chunky tomato salsa 240ml
  • 1 tbsp olive oil 15ml, for searing
  • 1 handful fresh cilantro chopped, for garnish
  • 1 whole fresh jalapeno sliced, for garnish

Equipment

  • 4 Heavy-Duty Aluminum Foil 12x12 inch sheets
  • 1 Large Skillet For searing the chicken
  • 1 Baking Sheet To hold the packets in the oven

Method
 

Prep and Assembly
  1. Heat oil in a skillet and sear sliced chicken for 2-3 minutes per side until golden brown.
  2. Divide beans, corn, and peppers onto four foil sheets. Top with chicken and salsa.
  3. Top with mixed cheeses and fold foil up into secure boats.
  4. Cook at 400°F (200°C) for 15-20 minutes until cheese is bubbly and chicken is 165°F.
  5. Top with fresh cilantro and jalapeno slices before serving.

Notes

Always use heavy-duty foil to prevent leaking.
Sear the chicken beforehand to ensure a golden texture rather than a steamed appearance.
