Roasted Garlic Cowboy Butter Ingredients
  • 1 cup Unsalted Butter 227g, high-quality European style preferred
  • 1 head Garlic Whole head for roasting
  • 2 tbsp Fresh Parsley 8g, finely chopped
  • 1 tsp Lemon Zest Freshly grated
  • 1/2 tsp Red Pepper Flakes Crushed
  • 1 tsp Dijon Mustard For emulsification
  • 1/2 tsp Cracked Black Pepper Coarsely ground
  • 1/4 tsp Kosher Salt To taste

  • 1 Aluminum foil For roasting garlic

  • 1 Small saucepan To melt butter

Method
 

Roast the Garlic
  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with oil, wrap in foil.
  2. Roast for 40-45 minutes until cloves are golden-brown and soft. Squeeze cloves out once cooled.
Mix the Sauce
  1. Place parsley, lemon zest, red pepper flakes, pepper, salt, and mustard in a ceramic ramekin.
  2. Melt butter in a saucepan over low heat until translucent and glossy.
  3. Pour hot butter over aromatics, add roasted garlic cloves, and stir gently to combine.

Notes

Use high-fat butter for the best glossy finish.
Ensure the butter isn't boiling when adding herbs to prevent browning.
