  • 1 cup (185g) white quinoa dry
  • 1 can (425g) black beans rinsed and drained
  • 1 cup (165g) sweet yellow corn canned or frozen
  • 1 cup (150g) cherry tomatoes halved
  • 1/2 cup (60g) red onion finely diced
  • 1/2 cup (15g) fresh cilantro chopped
  • 3 tbsp (45ml) lime juice freshly squeezed
  • 3 tbsp (45ml) extra virgin olive oil

Method
 

Preparation
  1. Rinse quinoa and simmer in 2 cups of water for 15 minutes. Let sit covered for 5 minutes, then fluff with a fork.
  2. Dice the red onion, halve the cherry tomatoes, and rinse the black beans. Combine in a large bowl with corn and cilantro.
  3. Whisk lime juice and olive oil. Pour over the quinoa and vegetable mixture. Toss until glistening and serve.

Notes

Rinse your quinoa thoroughly to avoid bitterness.
Wait for quinoa to reach room temperature before adding the fresh vegetables to keep them crisp.
