Ingredients
  

Main Ingredients
  • 4.5 cups All-purpose flour 560g
  • 1.5 cups Warm water 360ml, 110°F
  • 2.25 tsp Active dry yeast 7g
  • 1 tbsp Sugar 12g
  • 1 tsp Salt 6g
  • 8 oz Pepperoni slices 225g, thin circular slices
  • 2 cups Mozzarella cheese 225g, shredded
  • 4 tbsp Butter 56g, melted
  • 2 cloves Garlic minced
  • 2 tbsp Parmesan cheese grated
  • 1 tsp Dried oregano

Equipment

  • 1 Baking Sheet Lined with parchment paper
  • 1 Rolling Pin

Method
 

Prepare Dough
  1. Combine warm water, sugar, and yeast. Let sit for 10 minutes until foamy.
  2. Add flour and salt. Knead for 5-7 minutes until smooth. Let rise for 60 minutes until doubled.
Assemble and Bake
  1. Roll dough into a 12x18 inch rectangle. Top with mozzarella and pepperoni.
  2. Roll tightly into a log. Slice into 12-15 pieces. Place on parchment and let rise for 30 minutes.
  3. Bake at 375°F (190°C) for 20-25 minutes until golden brown.
  4. Brush with garlic butter and sprinkle with parmesan and oregano while hot.

Notes

Use dental floss to slice the rolls without flattening the dough.
Ensure the water is not too hot or it will kill the yeast.
