Ingredients
  

Graham Cracker Crust
  • 2 cups (200g) Graham cracker crumbs Finely crushed
  • 1/2 cup (113g) Unsalted butter Melted
  • 2 tbsp Granulated sugar
Cheesecake Filling
  • 32 oz (900g) Cream cheese Full-fat, room temperature
  • 1 1/4 cups (250g) Granulated sugar
  • 1/2 cup (120ml) Sour cream Room temperature
  • 4 large Eggs Room temperature
  • 1 tbsp Vanilla extract
Peach Topping & Crumble
  • 3 cups Peach slices Fresh or frozen
  • 1/2 cup (100g) Brown sugar Packed
  • 1 tsp Ground cinnamon
  • 1 cup (125g) All-purpose flour
  • 1/2 cup (113g) Cold butter Cubed

Equipment

  • 1 9-inch springform pan Wrapped in foil for water bath
  • 1 Pastry Cutter For the crumble topping

Method
 

Prepare the Crust
  1. Combine graham crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake at 325°F (163°C) for 10 minutes.
Make the Filling
  1. Beat cream cheese and sugar until smooth. Mix in sour cream and vanilla. Add eggs one at a time, mixing just until combined.
  2. Pour batter into crust. Place in a larger pan with 1 inch of hot water. Bake for 65 minutes.
Top and Finish
  1. Simmer peaches, brown sugar, and cinnamon until syrupy. Spoon over chilled cheesecake.
  2. Mix flour, brown sugar, and cold butter into crumbs. Toast on a baking sheet until golden, then sprinkle over the peaches.

Notes

Ensure all dairy is room temperature to avoid lumps.
Chill the cheesecake for at least 6 hours before adding the fruit topping to ensure a clean slice.
