  • 1.5 lbs boneless skinless chicken breasts approx 680g, pounded even
  • 1/2 cup all-purpose flour 60g
  • 2 large eggs beaten
  • 1 cup Panko breadcrumbs 60g
  • 1/2 cup Parmesan cheese 50g, finely grated
  • 1 tsp dried oregano 2g
  • 1/2 tsp cracked black pepper 1g
  • 2 tbsp fresh flat-leaf parsley 8g, finely chopped

  • 3 Shallow Dredging Bowls
  • 1 Meat Thermometer

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Organize three shallow bowls with flour, beaten eggs, and the combined panko/parmesan mixture.
  2. Dredge chicken in flour, dip in egg, then press firmly into the panko mixture until a thick, uneven crust forms.
Cooking
  1. Place chicken in a white ceramic dish and bake for 18-22 minutes until the crust is golden-brown and the internal temp is 165°F.
  2. Let rest for 5 minutes. Slice at an angle to show the moist interior and garnish with fresh parsley.

Notes

Press the breadcrumbs firmly into the chicken to ensure the crust doesn't fall off.
Use a meat thermometer to prevent overcooking the breast meat.
