  • 1.5 lbs Salmon Fillet approx. 680g, center-cut
  • 0.5 cup Parmesan Cheese approx. 45g, freshly grated
  • 0.25 cup Panko Breadcrumbs approx. 15g
  • 3 tbsp Unsalted Butter 45ml, melted
  • 2 cloves Garlic minced
  • 2 tbsp Fresh Parsley finely chopped
  • 0.5 tsp Kosher Salt
  • 0.25 tsp Black Pepper freshly cracked

  • 1 Baking Sheet or White Ceramic Platter Ensure it is oven-safe.
  • 1 Small mixing bowl

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Pat the salmon fillets completely dry with paper towels to ensure the crust sticks.
  2. Mix melted butter with minced garlic. Brush the mixture generously over the top of the salmon fillets.
Crusting and Baking
  1. Combine parmesan, breadcrumbs, salt, pepper, and half of the parsley. Press the mixture firmly into the buttered tops of the salmon.
  2. Place salmon on a white ceramic rectangular plate or baking sheet. Bake for 12-15 minutes until the salmon is flaky and the crust is golden brown.
  3. Optional: Broil for 1 minute for charred crispy edges. Scatter the remaining fresh parsley over the top and serve immediately with the pooling butter juices.

Notes

Patting the salmon dry is crucial for a crispy crust.
Use freshly grated parmesan for the best melting properties and flavor.
