One-Pot Steak and Pasta with Creamy Garlic Butter Sauce

  • 1 lb Sirloin or Ribeye Steak 450g, cut into 1-inch cubes
  • 8 oz Rotini Pasta 225g, dry
  • 3 tbsp Unsalted Butter 42g
  • 5 cloves Garlic minced
  • 2 cups Beef Broth 480ml
  • 1 cup Heavy Cream 240ml
  • 1/2 tsp Smoked Paprika for color and depth
  • 1/2 tsp Crushed Red Chili Flakes adjust for heat
  • 1/4 cup Fresh Parsley finely chopped
  • 1/4 cup Grated Parmesan 25g

Equipment

  • 1 Large Black Skillet Cast iron preferred for better searing.
  • 1 Chef's Knife

Method
 

Prepare and Sear
  1. Pat steak dry and season with salt. In a large skillet over medium-high heat, sear steak bites in oil until a dark brown crust forms (about 2 mins per side). Remove and set aside.
  2. Reduce heat to medium. Add butter and minced garlic. Sauté until fragrant (30 seconds). Deglaze the pan with a splash of broth.
Cook Pasta
  1. Add remaining beef broth, heavy cream, and smoked paprika. Stir in rotini pasta. Cover and simmer for 8-10 minutes until pasta is al dente.
  2. Return steak bites to the pan. Toss until the sauce is glossy and thick, coating the pasta and meat evenly.
Garnish
  1. Top with red chili flakes, fresh parsley, and parmesan cheese. Serve immediately.

Notes

Use a heavy skillet to ensure the steak gets a proper sear.
Don't overcook the pasta; it will continue to soften in the residual heat of the cream sauce.
