  • 1 lb Linguine pasta 454g
  • 6-8 cloves Fresh Garlic finely minced
  • 2 tbsp Unsalted Butter 28g
  • 3 cups Chicken Broth 710ml
  • 1 cup Heavy Cream 240ml
  • 1/2 cup Parmesan Cheese 45g, finely grated
  • 1/4 cup Fresh Parsley 15g, finely chopped
  • 3 shavings Parmesan Cheese Wide, thin shavings

Method
 

Prepare the Base
  1. Melt butter in a dark grey skillet. Add minced garlic and sauté until translucent but not browned.
  2. Add chicken broth and bring to a simmer. Add linguine and cook for 8-10 minutes, stirring frequently until liquid is reduced.
Finish the Sauce
  1. Stir in heavy cream and finely grated parmesan. Mix until a thick, opaque white sauce coats the noodles.
  2. Top with fresh parsley, extra grated cheese, and three thin parmesan shavings in the center.

Notes

Use fresh garlic rather than jarred for the best flavor profile.
Stir constantly during the final 5 minutes to ensure the sauce becomes perfectly glossy.
