Cook the Recipe
- In a 12-inch cast iron skillet, sear sausage rounds in oil over medium-high heat until deeply browned on both sides. Remove and set aside.
- Add onions and red peppers to the rendered fat in the skillet. Sauté until softened and translucent, about 5 minutes.
- Stir in the rice and cook for 1 minute to toast. Add beans and broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes until liquid is absorbed. Let sit for 5 minutes.
- Fluff with a fork, fold in the sausage, and garnish with green onions and dried herbs.
