  • 12 oz Smoked Sausage sliced into 1/2-inch rounds
  • 1.5 cups Long-Grain White Rice rinsed
  • 15 oz Black Beans 1 can, rinsed and drained
  • 1 medium Red Bell Pepper diced
  • 1 small Yellow Onion diced
  • 3 cups Chicken Broth or vegetable broth
  • 2 whole Green Scallions sliced for garnish
  • 1 teaspoon Dried Herb Flakes parsley or oregano

Method
 

Cook the Recipe
  1. In a 12-inch cast iron skillet, sear sausage rounds in oil over medium-high heat until deeply browned on both sides. Remove and set aside.
  2. Add onions and red peppers to the rendered fat in the skillet. Sauté until softened and translucent, about 5 minutes.
  3. Stir in the rice and cook for 1 minute to toast. Add beans and broth. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 18-20 minutes until liquid is absorbed. Let sit for 5 minutes.
  5. Fluff with a fork, fold in the sausage, and garnish with green onions and dried herbs.

Notes

Rinse rice thoroughly to prevent sticking.
Use a heavy-bottomed skillet to ensure even cooking.
