Muffin Batter
  • 3 large overripe bananas mashed with visible fibers
  • 1/3 cup (80ml) melted butter or oil
  • 1 large egg room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar packed
  • 1 tsp (5g) baking soda
  • 1/2 tsp (2.5g) baking powder
  • 1/2 tsp (2.5g) salt
  • 1/2 cup (150g) Nutella melted for swirling

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with white paper liners.
  2. In a large bowl, mash the bananas with a fork until desired consistency, keeping some fibers visible.
  3. Whisk in the melted butter, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, sugars, baking soda, baking powder, and salt.
  5. Gently fold the dry ingredients into the wet banana mixture until just combined. Do not overmix.
  6. Divide batter into liners. Top each with Nutella and swirl with a toothpick. Bake for 18-22 minutes until golden brown.

Notes

Use very spotted bananas for the best flavor.
Warm the Nutella for 10 seconds to make swirling easier.
