Muffin Batter
  • 1 1/2 cups (190g) All-purpose flour
  • 1 tsp (5g) Baking soda
  • 1 tsp (5g) Baking powder
  • 1/2 tsp (3g) Sea salt
  • 3 large Overripe bananas approx. 1 1/2 cups mashed
  • 1/2 cup (115g) Unsalted butter melted
  • 1/2 cup (100g) Light brown sugar packed
  • 1/4 cup (50g) Granulated white sugar
  • 1 large Egg room temperature
  • 1 tsp (5ml) Vanilla extract
  • 1/2 cup (150g) Nutella for swirling

  • 12 White paper muffin liners
  • 1 Large Mixing Bowl

Method
 

Preparation
  1. Preheat your oven to 425°F (218°C) and line your muffin tin with white paper liners.
  2. In a large bowl, mash bananas until smooth with some visible flecks remaining. Whisk in melted butter, sugars, egg, and vanilla.
  3. Sift dry ingredients into the wet mixture. Fold gently with a spatula until just combined.
  4. Divide batter into liners. Drop 1-2 tsp of Nutella on each and swirl with a toothpick to create a glossy dark brown pattern.
  5. Bake at 425°F for 5 mins, then lower to 350°F and bake for 12-15 more minutes until golden-brown.

Notes

Use overripe bananas for the best sweetness and moisture.
Don't over-mix the batter to ensure an airy crumb.
