Prepare the Marinade
- In a medium bowl, whisk together the olive oil, lemon juice, zest, minced garlic, dried oregano, salt, and pepper until emulsified.
- Place chicken in a resealable bag and pour marinade over. Refrigerate for 30 minutes to 2 hours.
Grill the Chicken
- Preheat grill to medium-high. Place chicken skin-side down and grill for 5-6 minutes until dark charred grill marks appear.
- Flip chicken and cook for 5-7 more minutes until the internal temperature reaches 165°F (74°C).
- Serve in a shallow bowl sprinkled with fresh parsley, red onion slices, and lemon wedges.
Notes
Use skin-on thighs for the best charred results.
