  • 3 fillets Atlantic Salmon Approx 6oz (170g) each, thick cut
  • 2 cups Baby Spinach 60g, fresh
  • 1/4 cup Sun-Dried Tomatoes 40g, sliced, oil-packed
  • 1/3 cup Feta Cheese 50g, crumbled
  • 2 tbsp Extra Virgin Olive Oil 30ml
  • 1 tsp Dried Oregano and Thyme 1g total
  • to taste Sea Salt and Black Pepper Freshly cracked

  • 1 Rectangular white ceramic baking dish
  • 1 Small skillet For wilting spinach

Method
 

Prep and Season
  1. Preheat oven to 400°F (200°C). Pat salmon fillets dry and place in a white ceramic baking dish.
  2. Drizzle salmon with 1 tbsp (15ml) olive oil and season with salt, cracked black pepper, and dried herbs.
Prepare Toppings
  1. Briefly sauté spinach in a pan for 60 seconds until just wilted. Squeeze out excess moisture.
  2. Toss spinach with sliced sun-dried tomatoes. Pile high onto each salmon fillet.
The Bake
  1. Scatter large chunks of feta cheese over the spinach-tomato mixture.
  2. Bake for 12-15 minutes until salmon is flaky and feta has softened at the edges.

Notes

Always pat the salmon dry before seasoning to ensure the herbs stick.
Check for internal temperature of 145°F (63°C) for perfect doneness.
