Main Ingredients
  • 1.5 lbs Chicken Breast 680g, sliced thin
  • 0.5 cup Korean BBQ Sauce 120ml
  • 2 tbsp Avocado Oil 30ml
  • 2 cups White Rice 370g dry Jasmine rice
  • 1 cup Carrots 125g, julienned
  • 1 cup Red Cabbage 70g, shredded
  • 1 medium Cucumber sliced into rounds
  • 1 cup Shelled Edamame 155g, steamed
  • 0.33 cup Mayonnaise 80ml
  • 1 tbsp Gochujang Paste 15g
  • 1 tsp Honey 5ml

Equipment

  • 1 Cast-Iron Skillet Best for caramelization
  • 1 Rice Cooker

Method
 

Preparation
  1. Rinse rice until water runs clear. Cook in 3 cups (710ml) of water until fluffy.
  2. Toss sliced chicken with BBQ sauce and let sit for 20 minutes.
Cooking & Assembly
  1. Heat oil in skillet. Sear chicken for 3-4 minutes per side until charred and caramelized.
  2. Layer rice, then chicken, then veggies in a bowl. Drizzle with sauce and garnish.

Notes

Use a heavy skillet for the best char.
Keep veggies separate for meal prep to maintain crunch.
