  • 1 large Sourdough Baguette sliced diagonally
  • 2 cloves Garlic peeled for rubbing
  • 2 tbsp Extra Virgin Olive Oil for brushing
  • 6 medium Roma Tomatoes finely diced
  • 1 clove Garlic minced
  • 1/4 cup Extra Virgin Olive Oil high quality
  • 1/2 cup Fresh Basil ribbons hand-torn
  • 1 tsp Coarse Sea Salt plus more for garnish
  • 1/2 tsp Cracked Black Pepper
  • 2 tbsp Balsamic Glaze for zig-zag drizzle

Method
 

Prepare the Topping
  1. In a medium bowl, combine the diced Roma tomatoes, minced garlic, olive oil, half the basil, sea salt, and black pepper. Stir gently to coat in a glossy sheen.
  2. Let the tomato mixture sit at room temperature for 10-15 minutes to allow flavors to meld.
Toast the Bread
  1. Brush sourdough slices with olive oil. Grill on a medium-high grill pan until visible dark grill marks appear and edges are charred.
  2. While bread is hot, rub the raw garlic cloves over the surface of each slice.
Assemble and Serve
  1. Spoon the tomato mixture generously onto the toasted bread slices.
  2. Garnish with remaining basil ribbons, extra sea salt, and a zig-zag drizzle of balsamic glaze.

Notes

Use Roma tomatoes for less moisture.
Rub garlic on the bread while it is steaming hot for the best flavor infusion.
