  • 3 3/4 cups All-purpose flour 470g
  • 3/4 cup Unsalted butter 170g, softened
  • 1 cup Granulated sugar 200g
  • 3 large Eggs Room temperature
  • 1/4 cup Whole milk 60ml
  • 1 tablespoon Baking powder 15g
  • 1 cup Chocolate hazelnut spread 280g
  • 1/2 cup Peach liqueur 120ml
  • 1/2 cup Orange liqueur 120ml
  • 1 cup Coarse granulated sugar For coating
  • 24 small Fresh mint leaves For garnish

  • 1 Piping Bag For the hazelnut filling

Method
 

Bake the Cookie Domes
  1. Cream softened butter and sugar until pale and fluffy. Beat in eggs and milk.
  2. Mix in flour and baking powder. Roll dough into 48 small balls (1 tbsp each). Bake at 350°F (175°C) for 15 mins until the bottoms are golden domes.
Fill and Decorate
  1. Slightly hollow out the flat side of each cookie. Pipe chocolate hazelnut cream into the center and sandwich two cookies together.
  2. Dip one side of the cookie in orange-tinted peach liqueur and the other in pink-tinted orange liqueur for a gradient effect.
  3. Immediately roll in coarse sugar to create a crystalline texture. Garnish the top with fresh mint leaves.

Notes

Do not over-dip the cookies or they will become soggy.
Use gel food coloring for the most vibrant, realistic peach colors.
