Hot Honey Chicken Quesadillas with Creamy Jalapeño Sauce

Ingredients
  

Main Ingredients
  • 2 cups shredded chicken breast cooked
  • 1/3 cup hot honey translucent red-orange
  • 2 cups Monterey Jack cheese freshly shredded
  • 4 large flour tortillas
  • 1 tbsp neutral oil for frying
Creamy Jalapeño Sauce
  • 1/2 cup sour cream 120ml
  • 1 whole jalapeño fresh
  • 1 tbsp lime juice 15ml
  • 1/4 cup fresh cilantro chopped

Equipment

  • 1 Large Skillet Cast iron preferred for better charring.
  • 1 Blender For the jalapeño sauce.

Method
 

Preparation
  1. Warm hot honey in a pan. Add shredded chicken and toss until coated in the red-orange glaze.
  2. Blend sour cream, jalapeño, lime juice, and cilantro until smooth and pale green.
Cooking
  1. Place cheese and glazed chicken on half of a tortilla, fold over.
  2. Fry in a greased skillet until tortillas are toasted golden brown with charred spots and cheese is melted.

Notes

Use freshly grated cheese for the best melt.
Control the heat by removing jalapeño seeds for the sauce.
