  • 1 lb Penne Pasta 450g
  • 1.5 lbs Chicken Breast 680g, cut into 1-inch chunks
  • 1/3 cup Honey 80ml, preferably dark amber
  • 2 tsp Coarse Black Pepper 10g, freshly ground
  • 2 tbsp Soy Sauce 30ml
  • 1 cup Heavy Cream 240ml
  • 1/2 cup Parmesan Cheese 50g, freshly grated
  • 3 cloves Garlic minced
  • 1 tbsp Butter 15g
  • 1 tsp Red Chili Flakes to garnish
  • 2 tbsp Fresh Parsley chopped

Method
 

Preparation
  1. Boil penne in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Season chicken with salt. Sear in a hot skillet with oil until golden-brown with charred edges.
  3. Reduce heat. Add honey, soy sauce, and coarse black pepper. Stir until a thick, glossy, dark amber glaze coats the chicken. Remove chicken from pan.
  4. Melt butter in the same pan, sauté garlic, then add heavy cream and Parmesan. Simmer until silky.
  5. Toss penne into the cream sauce, then fold in the glazed chicken. Garnish with parsley and chili flakes.

Notes

Use freshly ground pepper for the best visual specks.
Reserve pasta water to adjust sauce silkiness.
