  • 1/4 cup Lime Juice 60ml, fresh squeezed
  • 2 large Mangoes Diced into uniform cubes
  • 1/4 cup Red Onion 40g, finely diced

Preparation
  1. Whisk honey, lime juice, oil, and spices. Marinate chicken strips in half the mixture for 20 minutes.
  2. Combine diced mango, red onion, cilantro, bell pepper, and lime juice in a bowl. Set aside.
  3. Sear chicken on high heat to achieve dark char marks. Brush with remaining glaze during the last minute of cooking.

Notes

Reserve half the marinade for glazing to ensure a thick, glossy finish.
