Prepare and Assemble the Wraps
- In a small mixing bowl, whisk together the mayonnaise, sweet pickle relish, ketchup, white vinegar, paprika, garlic powder, onion powder, and a pinch of salt until smooth. Chill in the refrigerator.
- Heat a skillet over medium-high heat. Add the ground beef, season with salt and pepper, and cook for 5-7 minutes until beautifully browned. Drain excess fat and set aside.
- Shred the iceberg lettuce, finely dice the white onion, and pat the dill pickle slices dry with a paper towel.
- Lay tortillas flat. Spread special sauce in the center. Top with warm beef, a slice of American cheese, lettuce, onions, and pickles. Fold sides in and roll tightly from the bottom up.
- Heat olive oil or butter in the skillet over medium-low heat. Toast wraps seam-side down for 2-3 minutes until golden brown, flip, and toast for another 2 minutes. Slice diagonally to serve.
Notes
Drain the Beef Thoroughly: Excess fat will quickly soak through the tortilla, ruining the crisp exterior.
