Ingredients
  

For the Wraps
  • 1 lb (450g) Lean Ground Beef 80/20 blend recommended
  • 1 tsp (5g) Salt
  • 1/2 tsp (2.5g) Black Pepper
  • 4 Large Flour Tortillas 10-inch / 25cm burrito size
  • 4 slices American Cheese
  • 2 cups (140g) Iceberg Lettuce Shredded crisp
  • 1/2 cup (75g) White Onion Finely diced
  • 1/2 cup (75g) Dill Pickle Slices Tangy, patted dry
  • 1 tbsp (15ml) Olive Oil or Butter For toasting
For the Special Sauce
  • 1/2 cup (120ml) Mayonnaise Full fat
  • 2 tbsp (30g) Sweet Pickle Relish
  • 2 tbsp (30ml) Ketchup
  • 1 tsp (5ml) White Vinegar
  • 1 tsp (3g) Paprika
  • 1/2 tsp (1.5g) Garlic Powder
  • 1/2 tsp (1.5g) Onion Powder
  • 1 pinch Salt To taste

Equipment

  • 1 Large Cast Iron Skillet or Non-Stick Pan Essential for toasting the wrap and browning the beef.
  • 1 Small mixing bowl Used to mix the special sauce.

Method
 

Prepare and Assemble the Wraps
  1. In a small mixing bowl, whisk together the mayonnaise, sweet pickle relish, ketchup, white vinegar, paprika, garlic powder, onion powder, and a pinch of salt until smooth. Chill in the refrigerator.
  2. Heat a skillet over medium-high heat. Add the ground beef, season with salt and pepper, and cook for 5-7 minutes until beautifully browned. Drain excess fat and set aside.
  3. Shred the iceberg lettuce, finely dice the white onion, and pat the dill pickle slices dry with a paper towel.
  4. Lay tortillas flat. Spread special sauce in the center. Top with warm beef, a slice of American cheese, lettuce, onions, and pickles. Fold sides in and roll tightly from the bottom up.
  5. Heat olive oil or butter in the skillet over medium-low heat. Toast wraps seam-side down for 2-3 minutes until golden brown, flip, and toast for another 2 minutes. Slice diagonally to serve.

Notes

Drain the Beef Thoroughly: Excess fat will quickly soak through the tortilla, ruining the crisp exterior.
Do Not Skip the Toasting: Toasting the wrap seam-side down first seals the tortilla shut.
Let the Sauce Rest: Making the sauce ahead of time allows the dried spices to hydrate, drastically improving the flavor.
