  • 2 cups (370g) cooked white rice steamed and fluffy
  • 1 lb (450g) lean ground beef 90/10 lean
  • 1 tbsp (15ml) neutral oil avocado or vegetable oil
  • 2 tbsp (14g) taco seasoning chili powder, cumin, garlic powder
  • 1 can (425g) black beans rinsed and drained
  • 1 cup (165g) sweet corn cooked kernels
  • 1 cup (150g) cherry tomatoes halved
  • 4 radishes thinly sliced
  • 0.5 cup (115g) sour cream full fat preferred
  • 0.25 cup (10g) fresh cilantro chopped
  • 4 wedges fresh lime one per bowl
  • 0.5 cup (55g) cheddar cheese shredded

  • 1 Large Skillet For browning the beef
  • 1 Rice Cooker or Saucepan For steaming the rice

Method
 

Preparation
  1. Steam the white rice according to package instructions until fluffy and tender. Set aside.
  2. In a large skillet over medium-high heat, add oil and ground beef. Cook for 7-8 minutes until browned and crumbled. Stir in taco seasoning and a splash of water to coat.
  3. Place a base of steamed rice in a shallow bowl. Arrange beef, black beans, corn, halved cherry tomatoes, and sliced radishes in distinct sections on top.
  4. Add a dollop of sour cream in the center, sprinkle with cilantro and cheddar cheese, and place a lime wedge on the rim.

Notes

Keep radishes in ice water until serving for maximum crunch.
Use a damp paper towel when reheating rice to maintain moisture.
