Preparation and Cooking
- Heat oil in a cast iron skillet over medium-high heat. Add chicken pieces in a single layer and sear until golden brown on all sides (about 6-7 minutes total). Remove chicken from the pan.
- Add peppers and zucchini to the skillet. Cook for 4-5 minutes until edges are slightly charred. Add broccoli and 2 tablespoons of water; cover with a lid for 2 minutes to steam.
- Push vegetables to the side, add minced garlic to the center and cook for 30 seconds. Return chicken to the pan, add red pepper flakes, and toss everything together to glaze.
- Remove from heat and top with fresh chopped parsley before serving.
Notes
Ensure the skillet is very hot before adding the chicken to get a proper sear.
