Preparation
- Heat olive oil in a skillet and cook ground turkey until you have browned ground turkey crumbles. Season with garlic and oregano.
- Stir in the chunky tomato sauce and simmer for 5 minutes to thicken.
- In a white fluted ceramic casserole dish, layer the meat sauce and thick sliced zucchini rounds.
- Cover with a thick layer of mozzarella and dried parsley. Bake at 400°F (200°C) for 25-30 minutes until bubbly and toasted.
Notes
Pat the zucchini dry after slicing to prevent a watery casserole.
