  • 1.5 lbs Lean Ground Turkey 680g
  • 3 large Zucchini 750g, thick sliced rounds with dark green skin
  • 24 oz Chunky Tomato Sauce 710ml, marinara or crushed tomatoes
  • 2 cups Mozzarella Cheese 225g, shredded
  • 1 tbsp Olive Oil 15ml
  • 1 tsp Garlic Powder 5ml
  • 1 tsp Dried Oregano 5ml
  • 1 tsp Dried Parsley Flakes For garnish

  • 1 White fluted ceramic casserole dish 9x13 inch size preferred
  • 1 Large Skillet For browning turkey

Method
 

Preparation
  1. Heat olive oil in a skillet and cook ground turkey until you have browned ground turkey crumbles. Season with garlic and oregano.
  2. Stir in the chunky tomato sauce and simmer for 5 minutes to thicken.
  3. In a white fluted ceramic casserole dish, layer the meat sauce and thick sliced zucchini rounds.
  4. Cover with a thick layer of mozzarella and dried parsley. Bake at 400°F (200°C) for 25-30 minutes until bubbly and toasted.

Notes

Pat the zucchini dry after slicing to prevent a watery casserole.
Broil for the last 2 minutes for extra toasted cheese patches.
