Ground Turkey Stir Fry with Glossy Garlic Soy Sauce

Ingredients
  

Stir Fry Base
  • 1 lb 93% Lean Ground Turkey 450g
  • 2 cups Broccoli Florets 150g, fresh
  • 2 medium Carrots Thinly sliced on a diagonal
  • 1 tbsp Avocado Oil Or other high-heat oil
Glossy Garlic Soy Sauce
  • 1/4 cup Low-Sodium Soy Sauce 60ml
  • 2 tbsp Honey Or brown sugar
  • 1 tbsp Fresh Ginger Grated
  • 3 cloves Garlic Minced
  • 1 tsp Toasted Sesame Oil 5ml
  • 1 tsp Cornstarch Mixed with 1 tbsp water
Garnishes
  • 1 tbsp Toasted White Sesame Seeds
  • 2 whole Green Onions Finely chopped

Equipment

  • 1 Large Skillet or Wok 12-inch or larger preferred
  • 1 Small Pot For blanching broccoli

Method
 

Prep and Blanch
  1. Bring a pot of salted water to a boil. Blanch broccoli for 90 seconds until emerald green. Shock in an ice bath, drain, and pat dry.
Cook the Stir Fry
  1. Heat oil in a skillet. Add ground turkey and cook undisturbed for 4 minutes until deeply browned. Break into crumbles.
  2. Add carrots and cook for 3 minutes. Stir in garlic and ginger for 30 seconds until fragrant.
  3. Pour in the sauce mixture and cornstarch slurry. Stir constantly until the sauce thickens and becomes glossy. Fold in the broccoli.

Notes

For the best sear, let the turkey reach room temperature before cooking.
Use a high-heat oil like avocado or grapeseed oil to prevent smoking.
