  • 1 lb Ground Turkey 93% lean recommended (454g)
  • 8 oz Cremini Mushrooms Sliced (225g)
  • 5 oz Fresh Baby Spinach Washed (142g)
  • 3 cloves Garlic Minced
  • 1 tbsp Olive Oil 15ml
  • 1 tsp Cracked Black Pepper 5g
  • to taste Salt

Method
 

Prepare the Turkey
  1. Heat olive oil in a large cast iron skillet over medium-high heat. Add the ground turkey and break into large pieces. Let cook undisturbed for 4 minutes to develop a brown crust. Continue breaking into crumbles until fully cooked.
  2. Push turkey to the sides and add sliced mushrooms to the center. Sauté for 5 minutes until they develop golden edges and have released their moisture.
  3. Stir in the minced garlic and cracked black pepper. Cook for 1 minute until fragrant.
  4. Add fresh spinach in handfuls, stirring until just wilted and dark green. Season with salt to taste and serve immediately while glistening.

Notes

Use a 12-inch skillet to avoid steaming the mushrooms.
Freshly cracked pepper provides better visual appeal and flavor.
