Prepare the Turkey
- Heat olive oil in a large cast iron skillet over medium-high heat. Add the ground turkey and break into large pieces. Let cook undisturbed for 4 minutes to develop a brown crust. Continue breaking into crumbles until fully cooked.
- Push turkey to the sides and add sliced mushrooms to the center. Sauté for 5 minutes until they develop golden edges and have released their moisture.
- Stir in the minced garlic and cracked black pepper. Cook for 1 minute until fragrant.
- Add fresh spinach in handfuls, stirring until just wilted and dark green. Season with salt to taste and serve immediately while glistening.
Notes
Use a 12-inch skillet to avoid steaming the mushrooms.
