  • 1 lb (450g) Jumbo Shrimp Peeled and deveined, tails on
  • 12 oz (340g) Smoked Sausage Sliced into 1/2 inch rounds
  • 2 large Red Bell Peppers Cut into 1-inch squares
  • 1 large White Onion Cut into 1-inch chunks
  • 2 medium Zucchini Sliced into 1/2 inch rounds
  • 1/2 cup (120ml) Olive Oil Extra virgin
  • 1 tbsp (15g) Dried Oregano
  • 1 tsp (5g) Black Pepper Freshly cracked
  • 1/2 tsp (3g) Sea Salt

Equipment

  • 8 Wooden Skewers Soaked in water for 30 minutes
  • 1 Outdoor Grill Or indoor grill pan

Method
 

Preparation
  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. Whisk olive oil, dried oregano, cracked black pepper, and salt in a small bowl. Set aside.
Assembly & Cooking
  1. Thread ingredients onto skewers in a repeating pattern: shrimp, sausage round, red pepper square, white onion, and zucchini slice.
  2. Preheat grill to medium-high. Grill skewers for 3-4 minutes per side until shrimp is pink and opaque and vegetables show char marks.
  3. Brush the herb oil liberally over the skewers during the last minute of grilling. Serve immediately.

Notes

Always soak wooden skewers to prevent fire.
Use jumbo shrimp to ensure they don't overcook before the sausage chars.
