- In a bowl, combine oil, lemon juice, honey, garlic, pepper, salt, mustard, and half the parsley. Whisk until emulsified.
- Place chicken and marinade in a bag, coat well, and refrigerate for 30 minutes to 4 hours.
- Preheat grill to medium-high. Grill chicken for 5-6 minutes per side until internal temp reaches 165°F and dark grill marks appear.
- Let rest for 5 minutes on a white ceramic plate. Slice and garnish with remaining fresh parsley.
