  • 1.5 lbs Chicken Breasts Boneless, skinless (680g)
  • 1/2 cup Extra Virgin Olive Oil (120ml)
  • 1/4 cup Lemon Juice Freshly squeezed (60ml)
  • 1 tbsp Honey (15ml)
  • 4 cloves Garlic Finely minced
  • 1 tsp Cracked Black Pepper (2g)
  • 1/4 cup Fresh Parsley Finely chopped (15g)
  • 1 tsp Kosher Salt (6g)
  • 1 tbsp Dijon Mustard (15g)

  • 1 Grill Gas or Charcoal
  • 1 Meat Thermometer To check for 165°F

Method
 

Preparation
  1. In a bowl, combine oil, lemon juice, honey, garlic, pepper, salt, mustard, and half the parsley. Whisk until emulsified.
  2. Place chicken and marinade in a bag, coat well, and refrigerate for 30 minutes to 4 hours.
  3. Preheat grill to medium-high. Grill chicken for 5-6 minutes per side until internal temp reaches 165°F and dark grill marks appear.
  4. Let rest for 5 minutes on a white ceramic plate. Slice and garnish with remaining fresh parsley.

Notes

Pound the chicken to an even thickness for uniform cooking.
Don't over-marinate past 8 hours as the lemon juice will change the meat texture.
