  • 2 tbsp Avocado Oil High smoke point for searing
  • 1 cup Heavy Cream 240ml
  • 4 cloves Garlic Minced
  • 1 tsp Dried Italian Herbs For herb flecks
  • 0.5 tsp Cracked Black Pepper Plus more for seasoning
  • 2 tbsp Fresh Parsley Finely chopped for garnish

Method
 

Prepare the Chicken
  1. Pat the chicken cubes dry with paper towels and season liberally with salt and cracked black pepper.
  2. Heat oil in a matte black ceramic pan over medium-high heat. Sear chicken in batches for 3-4 minutes until a deep golden-brown crust with char marks forms.
Create the Sauce
  1. Remove chicken. Lower heat to medium and sauté garlic for 30 seconds.
  2. Add heavy cream, dried herbs, and black pepper. Simmer for 3-5 minutes until the sauce is thick, opaque, and pale-cream.
  3. Drizzle the sauce over the chicken bites and finish with a vibrant sprinkle of fresh parsley.

Notes
