  • 1/2 cup Dark Brown Sugar 110g
  • 2 tbsp Avocado Oil 30ml
  • 2 cups Sauerkraut 300g, golden variety
  • 1 tsp Caraway Seeds 2g
  • 1 tsp Cracked Black Pepper To taste
  • 1 tsp Dried Parsley Flakes For color

  • 1 Instant-Read Thermometer To ensure 145F internal temp

Method
 

Preparation
  1. Rub the pork chops generously with brown sugar, salt, and pepper. Let rest for 20 minutes.
  2. Grill over medium-high heat for 5-6 minutes per side until deep char marks appear and internal temp reaches 145F.
  3. Sauté sauerkraut with caraway seeds in a pan until golden-blonde and fragrant.
  4. Serve chops with a glossy glaze coating, garnish with parsley and cracked pepper, and serve sauerkraut on the side.

Notes

Pull pork at 140°F (60°C) as the temperature will rise during the rest.
Ensure grill grates are clean for the best grill marks.
