  • 1 lb Pizza Dough 454g, room temperature
  • 2 heads Garlic Whole heads for roasting
  • 1.5 cups Mozzarella Cheese 170g, shredded
  • 0.5 cup Ricotta Cheese 125g, whole milk
  • 0.25 cup Feta Cheese 40g, crumbled
  • 2 cups Fresh Baby Spinach 60g
  • 1 tsp Dried Oregano 1g
  • 1 pinch Red Pepper Flakes Adjust to taste
  • 2 tbsp Extra Virgin Olive Oil 30ml

Equipment

  • 1 Pizza Stone or Baking Sheet Preheat thoroughly for a charred crust.
  • 1 Aluminum foil For roasting the garlic.

Method
 

Prepare the Roasted Garlic
  1. Preheat oven to 400°F (200°C). Slice tops off garlic, drizzle with oil, wrap in foil, and bake for 45 mins until soft.
  2. Sauté spinach in a pan with a little oil for 60 seconds until wilted. Squeeze out all excess moisture.
Assemble and Bake
  1. Increase oven to 500°F (260°C). Stretch dough on a floured surface to 12 inches, leaving a thicker rim for bubbles.
  2. Layer mozzarella, dollops of ricotta, wilted spinach, whole roasted garlic cloves, and crumbled feta.
  3. Bake for 8-12 minutes until the crust shows golden-brown charred bubbles and cheese is melted.

Notes

Use a pizza stone for the best char.
Ensure spinach is very dry to avoid a soggy crust.
