  • 1.5 cups (300g) White Rice Uncooked
  • 3 cups (720ml) Water For cooking rice
  • 1 lb (454g) Ground Lamb
  • 1 tbsp (15ml) Olive Oil
  • 1 tbsp (5g) Dried Oregano
  • 2 cloves Garlic Mincing
  • 1 cup (240ml) Tzatziki Sauce Thick and creamy
  • 1 pint (300g) Cherry Tomatoes Halved
  • 1 large English Cucumber Sliced
  • 1/2 medium Red Onion Thinly sliced
  • 1/2 cup (75g) Feta Cheese Crumbled

Equipment

  • 1 Large Skillet Cast iron preferred for better charring
  • 1 Rice Cooker or Pot

Method
 

Preparation
  1. Rinse rice until water runs clear. Combine with water and salt in a pot. Bring to a boil, then simmer covered for 15-18 minutes until fluffy.
  2. Heat olive oil in a skillet. Add ground lamb and let sear undisturbed for 3 minutes. Break into crumbles and add oregano, garlic, salt, and pepper. Cook until charred and fully browned.
  3. While lamb cooks, slice the cucumbers, halve the cherry tomatoes, and thinly slice the red onion.
  4. Layer rice in bowls. Top with sections of lamb, cucumber, tomatoes, and onion. Add a dollop of tzatziki and garnish with feta and oregano.

Notes

For extra flavor, toast the rice in a little butter before adding water.
Use high-quality Greek feta stored in brine for the best salty kick.
