  • 1.5 lbs Chicken Breast Boneless, skinless (680g)
  • 1/4 cup Extra Virgin Olive Oil (60ml)
  • 3 tbsp Lemon Juice (45ml)
  • 1 tbsp Dried Oregano (5g)
  • 1 cup Cherry Tomatoes Halved (150g)
  • 1 large English Cucumber Diced (300g)
  • 1/2 cup Feta Cheese Crumbled (75g)
  • 1/2 cup Tzatziki Sauce (120g)

Equipment

  • 1 Grill or Grill Pan Ensures charred grill marks.
  • 1 Meat Thermometer To reach 165°F.

Method
 

Preparation
  1. Whisk olive oil, lemon, garlic, and oregano. Coat chicken and marinate for 30 minutes.
  2. Preheat grill to medium-high. Grill chicken for 6 minutes per side until charred grill marks appear and internal temp is 165°F.
  3. Rest chicken for 5 minutes, then slice. Serve with diced cucumbers, tomatoes, olives, red onion, feta, and tzatziki.

Notes

Always rest the chicken to keep it juicy.
Squeeze cucumber dry for the thickest tzatziki.
